All messengers other than Google talk have the text formatting feature to change font and color of the text. In Gtalk you don’t find text formatting feature but you can do bold your text in Google talk by using a simple trick of asterisk (*) as
*Your chat message*
Please note that you should not give spaces between asterisk (*) and your text to make it as bold and at the same time you should give space before asterisk.

In the same way you can format your text as italic by using underscore (_) as
_Your Chat Message_
Please note that you should give space before underscore (_) and should not give space after underscore.
